The olive extra virgin oils

COLLI DAUNI” is the single cultivar extra virgin olive oil that GRACO produces. It comes from pressing the Peranzana variety alone, a unique variety of olives present in a limited area of the territory.
It is harvested by hand at the right maturity and milled within twenty-four hours with the slow stone mills combined with a continuous cycle system which guarantees the quality and fragrance of the final product. Olive oil with a very low acidity and particular taste and smell is cold extracted. A medium intensity fruity taste with a strong olive taste, flavours ranging from artichoke to green tomato, an almond and slightly spicy aftertaste, it is a balanced product that enriches and brings out the taste of all dishes, unique as a cold dressing. GRACO with the collaboration of farmers who follow the regulations of the Dauno territory PDO selects some batches of Peranzana olives from which it produces the extra virgin olive oil “Colli Dauni”, which received the denomination “D.O.P. DAUNO Alto Tavoliere”.

Another production speciality that GRACO holds is the extra virgin olive oil “Colli Dauni-IL DENOCCIOLATO” also obtained from processing Peranzana olives alone but without the stones.
In this way a delightful product with a sweet and harmonious taste, slightly fruity and delicate with artichoke and celery taste is obtained with a bitter and slightly spicy and balanced sensation. It can be used for all kinds of cooking and above all for cold dressing fish dishes, carpaccio, salads, steamed vegetables.
